Yummy (and nutritious!) Lunchbox Ideas For Kids

As a preschool teacher, I hear from many parents who are concerned because their child just won't eat at lunchtime. They worry that their little one is not getting enough nutrients throughout the day. What's a mom (or dad) to do? Never fear... I have some ideas to help you get through this rough patch!

Tip #1: Keep Portions Small. Young children have little stomachs, so they don't need a lot of food at any one meal. Your child's stomach is about the size of her fist. She may be overwhelmed by a large serving of food, thinking that she is expected to eat it all. So instead of packing one large container of leftover casserole, try sending several smaller containers with a variety of foods that your child can sample.

Tip #2: Cut it Out! Even if you are not a baker, it would be in your best interest to pick up a couple of cookie cutters. (You can get them at the dollar store, they're not expensive.) Sandwiches, breads, cheese and lunch meats can all be cut into fun, edible shapes that kids love.

Tip #3: Take a Dip. Give your child a small container of dip to eat with raw fruits, veggies or whole grain crackers. Try hummus, guacamole or ranch dip with vegetables. Plain yogurt or soy butter is good with cut up fruits. Blend low-fat cottage cheese in a food processor or blender for a good dip with crackers

Tip #4: Mix it Up. Yummy and nutritious home made snack mixes can substitute for unhealthy (and expensive) potato chips. Mix about a half cup of whole grain cereal or granola with dried fruit, nuts or yogurt covered raisins. Kids gobble this up and don't even know it's good for them!

Tip #5: It's a Wrap! Instead of making a sandwich, wrap your child's favorite ingredients in a whole wheat or spinach tortilla. Tuck some fruits or veggies inside for added nutritional value. Use cream cheese or another soft spread to hold the tortilla shut and cut the wrap into bite-sized pieces.

Tip #6: Be Creative and Have Fun! Google "Bento" or "Laptop Lunch" for some ideas.
